- 1 cup Mascarpone cheese
- 1 cup Heavy cream
- 1/2 cup Powdered sugar
- 1/2 cup Pumpkin puree
- 2 tsp Chai spice blend
- 1 cup Brewed espresso
- 24 pieces Ladyfingers
Instructions
- Prepare Coffee Base: Brew espresso or strong coffee and cool slightly. Stir in pinch of chai spice for extra flavor depth.
- Whip Cream: Using electric mixer, whip heavy cream with powdered sugar until soft peaks form. Don’t overbeat.
- Make Pumpkin Mixture: In separate bowl, mix mascarpone cheese with pumpkin puree and chai spice until completely smooth.
- Combine Mixtures: Gently fold whipped cream into mascarpone mixture using rubber spatula until well combined.
- First Layer: Quickly dip ladyfingers in cooled coffee and arrange in single layer in dish. Spread half the pumpkin mixture over top.
- Final Assembly: Repeat layering with remaining ladyfingers and pumpkin mixture. Cover and refrigerate minimum 4 hours or overnight.
Notes
- Use room temperature mascarpone for easier mixing and smoother texture without lumps
- Dip ladyfingers quickly to prevent them from becoming too soggy and falling apart
