A warm and comforting pumpkin pecan cobbler featuring rich pumpkin puree, aromatic fall spices, and crunchy toasted pecans. This easy dessert combines the best flavors of autumn in one delicious dish.
Ingredients
Scale
- 1 can (15 oz) pumpkin puree
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 3 large eggs
- 1/2 cup milk
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/2 tsp ground ginger
- 1 cup chopped pecans
- 1 tsp baking powder
Instructions
- Prepare oven and dish: Preheat oven to 350°F (175°C) and lightly grease a 9×13 inch baking dish
- Mix wet ingredients: In a large mixing bowl, whisk together pumpkin puree, granulated sugar, brown sugar, eggs, milk, cinnamon, nutmeg, and ginger until smooth
- Add pecans: Gently fold in the chopped pecans using a rubber spatula
- Transfer to dish: Pour the mixture into the prepared baking dish, spreading evenly
- Bake: Bake for 45-50 minutes or until set in the center and golden brown around the edges
- Cool and serve: Allow to cool slightly before serving warm with vanilla ice cream or whipped cream
Notes
- Toast pecans in a dry skillet for 3-4 minutes before chopping to enhance their nutty flavor and crispness
- Use room temperature eggs and milk for easier mixing and smoother texture throughout the cobbler
- Test doneness by inserting a knife in the center – it should come out mostly clean with just a few moist crumbs
- Let the cobbler rest for 10 minutes after baking to allow the filling to set properly before serving
