Instructions

  1. Prepare Crust: Preheat oven to 350°F. Mix graham cracker crumbs with melted butter until evenly moistened. Press firmly into springform pan bottom.
  2. Make Filling: Beat softened cream cheese until completely smooth. Add sugar, then sour cream and pumpkin puree. Mix thoroughly between additions.
  3. Add Eggs and Spices: Beat in eggs one at a time, then vanilla extract, cinnamon, nutmeg, and ginger. Mix until just combined to avoid overmixing.
  4. Assemble Cheesecake: Pour filling over prepared crust. Smooth top with spatula for even surface.
  5. Prepare Streusel: Combine brown sugar and flour. Cut in cold butter pieces until mixture resembles coarse crumbs. Sprinkle evenly over filling.
