- 2 large boneless, skinless chicken breasts
- 2 teaspoons Italian seasoning
- Salt and pepper to taste
- 2 tablespoons butter, melted
- 1–2 tablespoons olive oil
- 10.5 oz cream of chicken soup
- 1½ cups milk
- 1 cup sour cream, at room temperature
- ½ teaspoon onion powder
- 1 oz packet ranch seasoning mix
Instructions
- Slice chicken breasts into 2-3 thinner pieces. Pound with meat tenderizer if needed to achieve ½ inch thickness.
- Sprinkle both sides of chicken with Italian seasoning, salt, and pepper. Brush one side with melted butter.
- Heat olive oil in large pan over medium-high heat. Sear chicken in batches for 4-5 minutes per side until golden brown crust develops. Remove and set aside.
- Add cream of chicken soup, milk, sour cream, onion powder, and ranch seasoning to same skillet over medium heat. Stir until combined and let bubble gently for 5 minutes.
- Return chicken to skillet and spoon sauce over top. Cover partially and let chicken heat through for about 10 minutes.
- Serve immediately with baked potatoes, spooning extra sauce over sides.
