Instructions
- Roast the Garlic: Preheat oven to 400°F (200°C). Cut top off garlic bulb, drizzle with olive oil, wrap in foil, and roast for 30-35 minutes until soft and golden
- Prepare Potatoes: Boil cubed potatoes in salted water until fork-tender, about 15-20 minutes. Test doneness by easily piercing with a fork
- Drain Thoroughly: Drain potatoes completely and let sit for 2-3 minutes to allow excess moisture to evaporate for better texture
- Add Roasted Garlic: Squeeze roasted garlic cloves directly into hot potatoes. Add butter and milk or cream while potatoes are still warm
- Mash and Season: Mash until smooth and creamy using gentle folding motions. Season with salt and pepper to taste, adjusting consistency with additional cream if needed

- Start roasting garlic first since it takes longest – the timing will align perfectly with your potato cooking schedule
- Don’t over-mash the potatoes as this activates too much starch and creates a gluey texture instead of creamy smoothness
- Warm your milk or cream slightly before adding to prevent cooling down the potatoes and ensure better incorporation
- Add liquid gradually – you can always add more, but you can’t take it away once the potatoes become too thin
