  • Author: Jennie Graham
  • Total Time: 15 minutes
  • Yield: 6 servings 1x

Description

This classic Rotel Dip combines melted cheese and spicy Rotel tomatoes for a creamy, savory dip that’s perfect for parties, game days, or a tasty snack.

Ingredients

Scale
  • 1 lb ground beef or sausage
  • 1 (10 oz) can Rotel diced tomatoes and green chilies, undrained
  • 1 lb (16 oz) Velveeta cheese, cubed
  • Tortilla chips, for serving

Instructions

  • In a large skillet, cook the ground beef or sausage over medium heat until fully browned. Drain any excess grease.
  • Lower the heat to medium-low, then add the cubed Velveeta cheese to the skillet. Stir frequently until the cheese is fully melted.
  • Pour in the Rotel tomatoes with their juice and stir until well combined.
  • Serve warm with tortilla chips.

Notes

  • For a spicier dip, use hot Rotel or add a dash of hot sauce.
  • You can substitute ground beef with turkey or skip the meat entirely for a vegetarian version.
  • Keep the dip warm in a slow cooker if serving for a party.
