Instructions

  • Prep Ingredients: Shred rotisserie chicken into bite-sized pieces. Dice bell peppers, chop onion, and mince garlic cloves.
  • Sauté Aromatics: Heat olive oil in large pot over medium heat. Sauté onion and garlic until translucent, about 3-4 minutes.
  • Brown Sausage: Add sliced turkey sausage to pot. Cook until browned and slightly crispy, approximately 5 minutes.
  • Toast Rice: Stir in long-grain rice and Cajun seasoning. Toast for 2 minutes while stirring constantly.
  • Add Liquids: Pour in diced tomatoes and chicken broth. Bring mixture to gentle simmer.
  • Add Proteins: Fold in shredded chicken and fresh shrimp. Simmer uncovered until shrimp turn pink, 5-7 minutes.
  • Garnish and Serve: Remove from heat. Garnish with sliced green onions and fresh parsley before serving hot.

Notes

  • Use day-old rice for better texture and to prevent mushy consistency in your jambalaya
  • Don’t skip toasting the rice with spices – this step develops deeper, more complex flavors
