Description

A quick and savory omelet packed with juicy sausage, diced tomatoes, and melted cheese, perfect for breakfast, brunch, or even a light dinner. This fluffy, protein-rich recipe is easy to make and full of flavor.

Ingredients

Scale
  • 4large eggsdivided
  • 1tablespoonswater
  • 2tablespoonsbutterdivided
  • 1/2lbground breakfast sausage
  • 1/2cuptomatoes diced
  • 1cupshredded cheese
  • Salt and pepper to taste
  • Chives for garnish

Instructions

  1. In a small bowl whisk 2 eggs and 1 tablespoon water and set aside.
  2. Heat a 10-inchnonstick skilleton medium-high heat. Add the sausage and cook until browned about 3-5 minutes. Remove to a bowl to drain grease.
  3. In the same skillet, on medium-low heat add 1 tablespoon of butter and melt.
  4. Pour in whisked eggs. Eggs should be set immediately at the edges.
  5. After some of the egg has been set lift the edges of the omelet with a spatula. And tilt the pan a little to allow the uncooked egg to come into contact with the hot pan.
  6. Add 1/2 of the cheese, sausage, and tomatoes to one side of the omelet. Carefully use a spatula and flip the other side over. Reduce heat to low and cook for about 1 1/2 minutes or until egg is cooked through. Remove to a plate and repeat with the remaining ingredients to make the second omelet.
  7. Serve with your favorite breakfast sides!
