- 8 oz Fresh mushrooms (cremini or button), sliced
- 4 cups Fresh spinach
- 2 tbsp Extra virgin olive oil
- 3 cloves Garlic cloves, minced
- Salt and pepper to taste
Instructions
- Step 1: Prepare – Clean mushrooms with damp cloth and slice evenly. Rinse spinach and dry thoroughly. Mince garlic finely.
- Step 2: Heat Oil – Heat olive oil in large skillet over medium heat until shimmering but not smoking.
- Step 3: Add Garlic – Add minced garlic and sauté for 30 seconds until fragrant, stirring constantly to prevent burning.
- Step 4: Cook Mushrooms – Add sliced mushrooms and cook 5-7 minutes until golden brown and moisture releases, stirring occasionally.
- Step 5: Add Spinach – Stir in spinach and cook 2-3 minutes until just wilted but still bright green.
- Step 6: Season – Season with salt and pepper to taste before serving immediately while hot.
Notes
- Don’t overcrowd the pan when cooking mushrooms as this creates steam instead of the desired golden browning
- Pat mushrooms dry before slicing to remove excess moisture and achieve better caramelization
- Add spinach gradually if your pan is small, allowing each batch to wilt before adding more
- Keep garlic moving in the pan to prevent burning, which creates bitter flavors
