Instructions
- Step 1: Prep Vegetables – Wash and slice carrots into 1-inch pieces, dice onion, and mince garlic cloves finely
- Step 2: Season Chicken – Pat chicken thighs dry and season generously with salt, pepper, thyme, and rosemary
- Step 3: Layer Ingredients – Place seasoned chicken in slow cooker bottom, then add carrots, onions, and garlic on top
- Step 4: Prepare Sauce – Whisk honey and soy sauce in bowl until smooth, then pour evenly over layered ingredients
- Step 5: Add Broth – Pour chicken broth until it covers approximately half of the ingredients in the slow cooker
- Step 6: Cook – Cover and cook on low for 6 hours or high for 3 hours until chicken is fork-tender
