- 4 tbsp unsalted butter, melted
- 6 garlic cloves, minced
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp smoked paprika
- 1 tbsp Worcestershire sauce
- 1 cup beef broth
- 1 tbsp fresh thyme leaves (or 1 tsp dried thyme)
- 1 tbsp fresh parsley, chopped (for garnish)
Instructions
- Prepare the Beef: Season the chuck roast on all sides with salt, pepper, and smoked paprika.
- Sear (Optional): Heat a skillet over medium-high heat. Sear the beef on all sides for 2-3 minutes until browned. (This adds flavor but can be skipped if short on time.)
- Garlic Butter Mix: In a small bowl, mix the melted butter, minced garlic, and Worcestershire sauce.
- Assemble in Slow Cooker: Place the beef in the slow cooker. Pour the garlic butter mixture over the beef. Add the beef broth and sprinkle thyme on top.
- Cook: Cover and cook on low for 8 hours or high for 4 hours, until the beef is fork-tender.
- Shred and Serve: Shred the beef using two forks, mixing it with the juices. Garnish with parsley before serving.
