Description

Ingredients

  • 2 lbs (900g) chuck roast, trimmed of excess fat
  • 4 tbsp unsalted butter, melted
  • 6 garlic cloves, minced
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp smoked paprika
  • 1 tbsp Worcestershire sauce
  • 1 cup beef broth
  • 1 tbsp fresh thyme leaves (or 1 tsp dried thyme)
  • 1 tbsp fresh parsley, chopped (for garnish)

Instructions

  • Prepare the Beef: Season the chuck roast on all sides with salt, pepper, and smoked paprika.
  • Sear (Optional): Heat a skillet over medium-high heat. Sear the beef on all sides for 2-3 minutes until browned. (This adds flavor but can be skipped if short on time.)
  • Garlic Butter Mix: In a small bowl, mix the melted butter, minced garlic, and Worcestershire sauce.
  • Assemble in Slow Cooker: Place the beef in the slow cooker. Pour the garlic butter mixture over the beef. Add the beef broth and sprinkle thyme on top.
  • Cook: Cover and cook on low for 8 hours or high for 4 hours, until the beef is fork-tender.
  • Shred and Serve: Shred the beef using two forks, mixing it with the juices. Garnish with parsley before serving.
