Description

Bursting with flavor and vibrant colors, these Southwest chicken wraps combine tender marinated chicken, colorful bell peppers, black beans, corn, and a zesty chipotle lime crema. Ready in under an hour, they’re perfect for any meal and easily customizable.


Ingredients

  • ¾ lb chicken breast, diced
  • ¼ cup lime juice
  • ½ tsp chili powder
  • ½ tsp onion powder
  • 1 tsp garlic powder
  • ½ tsp smoked paprika
  • ¼ tsp salt
  • 3 tbsp olive oil
  • 1 tbsp chipotle in adobo, minced

Instructions

  1. Marinate chicken in spices, lime, olive oil, chipotle.
  2. Cook rice; set aside.
  3. Blend crema ingredients; adjust thickness.
  4. Cook chicken in skillet until done.
  5. Sauté bell pepper, jalapeño, onion; add garlic.
  6. Combine chicken & veggies.
  7. Warm tortillas.
  8. Assemble: layer rice, chicken mix, beans, corn, cheese; drizzle crema.
  9. Roll tightly; serve.

Notes

  • Warm tortillas to prevent cracking.
  • Don’t skip marinade for best flavor.
  • Toast assembled wraps for crispy exterior.
