  • 1 tsp ground cumin

  • Salt and pepper to taste

Instructions

  • Step 1: Prepare Base – Heat olive oil in large pot over medium heat. Add chopped onion and sauté until translucent, about 5 minutes. Add minced garlic and cook until fragrant, about 1 minute.
  • Step 2: Bloom Spices – Stir in cumin, smoked paprika, cayenne pepper, salt, and pepper. Cook for 30 seconds to release the spices’ essential oils and enhance their flavors.
  • Step 3: Add Liquids – Pour in diced tomatoes with their juice and vegetable broth. Bring mixture to a gentle simmer, stirring occasionally to combine all ingredients.
  • Step 4: Add Chickpeas – Incorporate drained and rinsed chickpeas into the simmering liquid. Continue cooking for 10 minutes to allow flavors to meld together.
  • Step 5: Finish with Spinach – Fold in fresh spinach leaves and cook until completely wilted, approximately 2 minutes. Taste and adjust seasonings as needed before serving hot.
