Description

A creamy, indulgent spinach artichoke gnocchi baked to golden perfection. This comforting dish combines tender gnocchi with a rich cheese sauce, nutritious spinach, and tangy artichoke hearts for the ultimate comfort food experience.

Ingredients

Scale
  • 1 lb Fresh gnocchi
  • 10 oz Frozen spinach (thawed, drained)
  • 14 oz Canned artichoke hearts (drained, chopped)
  • 8 oz Cream cheese (softened)
  • 1 cup Mozzarella cheese (shredded)
  • 1/2 cup Parmesan cheese (grated)
  • 1 tsp Garlic powder
  • 1 tsp Italian herbs (dried)

Instructions

  1. Prepare oven and dish: Preheat oven to 375°F (190°C) and grease 9×13 inch baking dish thoroughly
  2. Cook gnocchi: Boil salted water, add gnocchi, cook until floating (2-3 minutes), then drain immediately
  3. Sauté vegetables: Heat skillet over medium heat, sauté drained spinach and chopped artichokes for 5 minutes
  4. Make cheese sauce: Blend softened cream cheese, mozzarella, garlic powder, herbs, salt, and pepper until smooth
  5. Combine ingredients: Gently fold cooked gnocchi into cheese mixture, then add sautéed vegetables
  6. Bake to perfection: Transfer to baking dish, top with Parmesan, bake 25-30 minutes until bubbly and golden

Notes

  • Squeeze thawed spinach in clean kitchen towel to remove excess moisture, preventing watery sauce
  • Let cream cheese reach room temperature for 30 minutes before mixing for smoother consistency
  • Don’t overcook gnocchi initially since they’ll continue cooking in the oven
  • Let rest 5 minutes after baking for easier serving and better texture
