Ingredients
Scale
- 1 lb Fresh gnocchi
- 10 oz Frozen spinach (thawed, drained)
- 14 oz Canned artichoke hearts (drained, chopped)
- 8 oz Cream cheese (softened)
- 1 cup Mozzarella cheese (shredded)
- 1/2 cup Parmesan cheese (grated)
- 1 tsp Garlic powder
- 1 tsp Italian herbs (dried)
Instructions
- Prepare oven and dish: Preheat oven to 375°F (190°C) and grease 9×13 inch baking dish thoroughly
- Cook gnocchi: Boil salted water, add gnocchi, cook until floating (2-3 minutes), then drain immediately
- Sauté vegetables: Heat skillet over medium heat, sauté drained spinach and chopped artichokes for 5 minutes
- Make cheese sauce: Blend softened cream cheese, mozzarella, garlic powder, herbs, salt, and pepper until smooth
- Combine ingredients: Gently fold cooked gnocchi into cheese mixture, then add sautéed vegetables
- Bake to perfection: Transfer to baking dish, top with Parmesan, bake 25-30 minutes until bubbly and golden
Notes
- Squeeze thawed spinach in clean kitchen towel to remove excess moisture, preventing watery sauce
- Let cream cheese reach room temperature for 30 minutes before mixing for smoother consistency
- Don’t overcook gnocchi initially since they’ll continue cooking in the oven
- Let rest 5 minutes after baking for easier serving and better texture
