This stunning no-bake Summer Berry Jello Lasagna features colorful layers of berry gelatin, creamy filling, and fresh fruit on a buttery cookie crust. Perfect for hot summer days and patriotic celebrations.

- 36 Golden Oreo cookies
- 1/2 cup unsalted melted butter
- 2 tablespoons each: red, white, and blue sprinkles (optional)
- 6 oz. sweetened berry blue gelatin
- 2/3 cup boiling water
- 1/2 cup cold Greek yogurt
- 1 1/2 cups fresh blueberries
- 8 oz. softened cream cheese
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 3/4 cups whipped cream
- 6 oz. strawberry gelatin
- 1 1/4 cups boiling water
- 3/4 cup iced water
- 4 cups sliced strawberries
- 2 cups whipped cream for topping
- Festive sprinkles for garnish
Instructions
- Process whole Oreo cookies with filling in food processor until fine crumbs form. Mix in sprinkles with a fork.
- Stir melted butter into cookie crumbs until evenly moistened. Press mixture firmly into bottom of 9×13-inch dish. Freeze while preparing next layer.
- Dissolve berry blue gelatin in 2/3 cup boiling water in heat-proof bowl. Stir completely and set aside to cool.
- Beat softened cream cheese, powdered sugar, and vanilla until smooth. Fold in 1 3/4 cups whipped cream until combined.
- Pulse Greek yogurt and fresh blueberries in food processor. Whisk mixture into cooled blue gelatin. Fold in cream cheese mixture.
- Spread blueberry mixture over chilled crust. Refrigerate or freeze until set.
- Dissolve strawberry gelatin in 1 1/4 cups boiling water. Add iced water and stir well. Cool to room temperature.
- Arrange sliced strawberries over cream cheese layer. Pour cooled strawberry gelatin over fruit.
- Refrigerate 4-6 hours or overnight until firmly set. Top with whipped cream and sprinkles before serving.
Notes
- This dessert must chill at least 4 hours but tastes even better made a day ahead
- Fresh berries are essential – frozen ones release too much water and ruin the texture
- Each layer needs to be completely set before adding the next to maintain distinct colors
- The dessert will keep its shape better if you use slightly less liquid than package directions suggest
- Let each layer set completely before adding the next to prevent colors from bleeding together
- Use a offset spatula dipped in hot water to spread cream cheese mixture smoothly
- Pat strawberries dry with paper towels to prevent excess moisture in the layers
