Description

This stunning no-bake Summer Berry Jello Lasagna features colorful layers of berry gelatin, creamy filling, and fresh fruit on a buttery cookie crust. Perfect for hot summer days and patriotic celebrations.

  • 36 Golden Oreo cookies
  • 1/2 cup unsalted melted butter
  • 2 tablespoons each: red, white, and blue sprinkles (optional)
  • 6 oz. sweetened berry blue gelatin
  • 2/3 cup boiling water
  • 1/2 cup cold Greek yogurt
  • 1 1/2 cups fresh blueberries
  • 8 oz. softened cream cheese
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 3/4 cups whipped cream
  • 6 oz. strawberry gelatin
  • 1 1/4 cups boiling water
  • 3/4 cup iced water
  • 4 cups sliced strawberries
  • 2 cups whipped cream for topping
  • Festive sprinkles for garnish

Instructions

  1. Process whole Oreo cookies with filling in food processor until fine crumbs form. Mix in sprinkles with a fork.
  2. Stir melted butter into cookie crumbs until evenly moistened. Press mixture firmly into bottom of 9×13-inch dish. Freeze while preparing next layer.
  3. Dissolve berry blue gelatin in 2/3 cup boiling water in heat-proof bowl. Stir completely and set aside to cool.
  4. Beat softened cream cheese, powdered sugar, and vanilla until smooth. Fold in 1 3/4 cups whipped cream until combined.
  5. Pulse Greek yogurt and fresh blueberries in food processor. Whisk mixture into cooled blue gelatin. Fold in cream cheese mixture.
  6. Spread blueberry mixture over chilled crust. Refrigerate or freeze until set.
  7. Dissolve strawberry gelatin in 1 1/4 cups boiling water. Add iced water and stir well. Cool to room temperature.
  8. Arrange sliced strawberries over cream cheese layer. Pour cooled strawberry gelatin over fruit.
  9. Refrigerate 4-6 hours or overnight until firmly set. Top with whipped cream and sprinkles before serving.

Notes

  • This dessert must chill at least 4 hours but tastes even better made a day ahead
  • Fresh berries are essential – frozen ones release too much water and ruin the texture
  • Each layer needs to be completely set before adding the next to maintain distinct colors
  • The dessert will keep its shape better if you use slightly less liquid than package directions suggest
  • Let each layer set completely before adding the next to prevent colors from bleeding together
  • Use a offset spatula dipped in hot water to spread cream cheese mixture smoothly
  • Pat strawberries dry with paper towels to prevent excess moisture in the layers
