Instructions

  • Step 1: Roast Sweet Potatoes – Preheat oven to 425°F (220°C). Toss diced sweet potatoes with olive oil, salt, pepper, and optional spices; roast for 25-30 minutes until tender.
  • Step 2: Prepare Black Beans – In a saucepan over medium heat, combine black beans with lime juice and seasoning; heat until warmed through.
  • Step 3: Make Avocado Spread – Mash avocado with lime juice, salt, and pepper in a bowl until creamy.
  • Step 4: Assemble Bowls – Spread mashed avocado on each tortilla, then layer with roasted sweet potatoes, black beans, and salsa.
  • Step 5: Roll and Serve – Roll tortillas tightly, folding in sides to secure fillings. Cut wraps diagonally in half and serve immediately.
