- 1 pound lean ground beef
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 packet taco seasoning
- 1 cup chunky salsa
- ¼–½ cup water
Instructions
- Brown beef with onion & garlic; drain.
- Stir in taco seasoning, salsa; simmer 5 min; add water if needed.
- Microwave sweet potatoes 8-10 min until tender.
- Cut, fluff potatoes.
- Spoon taco meat over; top with cheese, tomato, avocado, sour cream.
- Serve hot with extra toppings.

- For crispier skin, brush potatoes with olive oil before microwaving.
- Try roasting potatoes at 400°F for deeper flavor.
- Add tomato paste to meat for richer taste.
