Description

A creative twist on taco night that combines seasoned taco meat with baked sweet potatoes for a satisfying and nutritious meal that’s ready in just 20 minutes.


Ingredients

  • 4 medium sweet potatoes (about 1214 ounces each)
  • 1 pound lean ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 packet taco seasoning
  • 1 cup chunky salsa
  • ¼½ cup water

Instructions

  1. Brown beef with onion & garlic; drain.
  2. Stir in taco seasoning, salsa; simmer 5 min; add water if needed.
  3. Microwave sweet potatoes 8-10 min until tender.
  4. Cut, fluff potatoes.
  5. Spoon taco meat over; top with cheese, tomato, avocado, sour cream.
  6. Serve hot with extra toppings.

  • For crispier skin, brush potatoes with olive oil before microwaving.
  • Try roasting potatoes at 400°F for deeper flavor.
