Scale
- 1 unbaked pie crust (9-inch, store-bought or homemade)
- 1 cup pecan halves (fresh preferred)
- 1 cup granulated sugar
- 1/2 cup light corn syrup
- 1 cup dark chocolate chips (semi-sweet works too)
- 1/2 cup unsalted butter (melted)
- 3 large eggs
- 1 teaspoon vanilla extract (pure extract)
Instructions
- Prep: Preheat oven to 350Β°F, melt butter and chocolate together until smooth (5 minutes, stir until smooth)
- Mix: Whisk sugar, corn syrup, eggs, chocolate mixture, vanilla together (3 minutes, blend thoroughly)
- Assemble: Fold in pecans, pour into pie crust, spread evenly (2 minutes, gentle folding)
- Bake: Bake 50-60 minutes until set but slightly jiggly center (Check at 50 minutes)
Notes
- Toast pecans lightly before adding for enhanced nutty flavor
- Let chocolate mixture cool slightly before adding eggs to prevent scrambling
- Cover pie edges with foil if browning too quickly during baking
- The filling should be set around edges with a slight wobble in center for perfect texture once cooled
