Instructions
- Step 1: Sauté aromatics – Heat olive oil in large pot over medium heat. Add chopped onions and minced garlic. Cook until translucent, about 5 minutes.
- Step 2: Add tomatoes – Stir in halved tomatoes and vegetable broth. Bring to gentle simmer for 15 minutes until tomatoes soften completely.
- Step 3: Blend smooth – Use immersion blender to blend mixture until completely smooth. Return to low heat if using regular blender.
- Step 4: Add dairy – Mix in heavy cream and grated cheddar cheese. Stir continuously until cheese melts and combines smoothly.
- Step 5: Finish and serve – Add chopped basil leaves and season with salt and pepper. Simmer 5 minutes before serving hot.
