Ingredients
Scale
- 1 lb ground turkey
- Salt and pepper to taste
- 8–10 large romaine lettuce leaves
- 1/2 cup hummus
- 1 cup cherry tomatoes
- 1 medium cucumber
- 2 tablespoons fresh herbs (parsley, mint, or cilantro)
- Garlic powder (optional)
- Cumin (optional)
- Paprika (optional)
Instructions
- Cook Turkey: Heat skillet over medium heat. Add ground turkey with salt and pepper. Cook 5-7 minutes until browned and cooked through, breaking up with spoon.
- Prep Vegetables: While turkey cooks, wash and dry romaine leaves. Halve cherry tomatoes and slice cucumber thinly. Chop fresh herbs.
- Assemble Base: Spread 2 tablespoons hummus on each lettuce leaf, creating an even layer for toppings to adhere.
- Add Fillings: Top each hummus-covered leaf with cooked turkey, cherry tomatoes, and cucumber slices in that order.
- Finish and Serve: Sprinkle fresh herbs over fillings. Roll from one end or fold sides and enjoy immediately. Secure with toothpick if needed.
Notes
- Pat lettuce leaves completely dry to prevent soggy wraps and ensure hummus adheres properly
- Season turkey generously with garlic powder, cumin, and paprika for extra Mediterranean flavor
- Choose sturdy outer romaine leaves that won’t tear when filled and rolled
- Let cooked turkey cool slightly before assembling to prevent wilting the lettuce
