Ingredients

  • 4 pieces (6 oz each) Salmon fillets
  • 1 cup Heavy cream
  • 1 cup Grated Parmesan cheese
  • 3 cloves, minced Garlic cloves
  • 2 cups Fresh spinach
  • 2 tablespoons Fresh lemon juice
  • 2 teaspoons Italian seasoning
  • 2 tablespoons Extra virgin olive oil
  • To taste Salt and pepper

Instructions

  • Step 1: Prepare Salmon – Pat dry salmon fillets thoroughly with paper towels. Season both sides generously with salt and pepper, allowing seasoning to penetrate for 2-3 minutes.
  • Step 2: Sear Salmon – Heat olive oil in large skillet over medium heat. Add salmon fillets skin-side down, cook undisturbed for 4-5 minutes until golden brown. Flip and cook 3-4 minutes more.
  • Step 3: Rest Salmon – Remove salmon from skillet and set aside on plate. Cover loosely with foil to keep warm while preparing sauce.
  • Step 4: Build Sauce Base – In same pan, sauté minced garlic for 30 seconds until fragrant. Add heavy cream, scraping up browned bits from pan bottom.
  • Step 5: Thicken Sauce – Simmer cream for 3-4 minutes until slightly thickened. Gradually stir in grated Parmesan cheese until completely melted and smooth.
  • Step 6: Add Vegetables – Add fresh spinach to sauce, stirring until wilted completely. This takes about 1-2 minutes.
  • Step 7: Final Assembly – Return salmon to pan, drizzle with lemon juice and sprinkle Italian seasoning. Cook on low heat 2-3 minutes to warm through.

Notes

  • Use room temperature salmon for even cooking and better searing results that prevent sticking.
  • Freshly grated Parmesan melts smoother than pre-grated cheese, preventing lumpy sauce texture.
  • Keep cream sauce on low heat after adding cheese to prevent breaking and curdling.
  • Add lemon juice at the end to preserve bright flavor and prevent cream from curdling.
