Ingredients
Scale
- 4 medium Russet potatoes
- 4 tbsp Unsalted butter
- 1 cup Full-fat sour cream
- 1½ cups shredded Sharp cheddar cheese
- 6 slices chopped Crispy bacon
- 3 sliced Green onions
- Salt and pepper to taste
Instructions
- Prep and Bake: Preheat oven to 400°F. Wash potatoes thoroughly and bake directly on oven rack for 1 hour until fork-tender
- Cool and Scoop: Allow potatoes to cool slightly, slice in half, and scoop insides into large mixing bowl
- Mix Filling: Add butter, sour cream, half the cheddar, bacon, salt, and pepper. Mash until creamy with some lumps
- Assemble: Transfer mixture to greased baking dish. Top with remaining cheese and green onions
- Final Bake: Bake at 400°F for 20-25 minutes until heated through and bubbly on top
Notes
- Pierce potatoes with a fork before baking to prevent bursting and ensure even cooking
- Don’t overmix the potato mixture – leaving some lumps creates better texture and authenticity
- Cook bacon until extra crispy since it will soften slightly during the final baking process
- Let the casserole rest for 5-10 minutes after baking to allow flavors to meld and temperature to stabilize
