  • 4 tbsp Unsalted butter
  • 1 cup Full-fat sour cream
  • 1½ cups shredded Sharp cheddar cheese
  • 6 slices chopped Crispy bacon
  • 3 sliced Green onions
  • Salt and pepper to taste

Instructions

  • Prep and Bake: Preheat oven to 400°F. Wash potatoes thoroughly and bake directly on oven rack for 1 hour until fork-tender
  • Cool and Scoop: Allow potatoes to cool slightly, slice in half, and scoop insides into large mixing bowl
  • Mix Filling: Add butter, sour cream, half the cheddar, bacon, salt, and pepper. Mash until creamy with some lumps
  • Assemble: Transfer mixture to greased baking dish. Top with remaining cheese and green onions
  • Final Bake: Bake at 400°F for 20-25 minutes until heated through and bubbly on top
