- 3 cups cubed watermelon
- 1 cup coconut milk
- 2 tablespoons honey or maple syrup
- 1 tablespoon lime juice
Instructions
- Step 1: Prepare Watermelon – Blend the cubed watermelon in a blender until completely smooth. Strain if desired for ultra-smooth texture.
- Step 2: Make Coconut Mixture – In a separate bowl, whisk together coconut milk, honey or maple syrup, and lime juice until well combined.
- Step 3: Layer the Mixtures – Start with watermelon puree in molds, add coconut mixture layer, repeat until molds are filled, leaving small space at top.
- Step 4: Add Sticks and Freeze – Insert popsicle sticks and freeze for at least 6 hours or until completely solid.
- Step 5: Remove and Serve – Run warm water over outside of molds for 10-15 seconds to help release the popsicles easily.
Notes
- Chill your coconut milk beforehand for easier layering and better texture contrast
- Tap molds gently after each layer to remove air bubbles and create cleaner lines
- Freeze the first layer for 30 minutes before adding the second for more defined layers
- Use a spoon to drizzle mixtures slowly for better control over layering
