- 6 cups seedless watermelon, cubed and chilled (2 lbs after peeling)
- 4 cups cold water
- 3/4 cup fresh lemon juice, strained and chilled
- 2/3 cup granulated sugar
- Ice cubes as needed
- Fresh mint leaves for garnish
Instructions
- Add 6 cups cubed watermelon to blender. Pulse until completely pureed (about 4 cups). Pour through fine mesh strainer into bowl, pressing solids gently.
- In large pitcher, whisk together 4 cups cold water, 3/4 cup fresh lemon juice, and 2/3 cup sugar until sugar completely dissolves.
- Stir strained watermelon puree into lemon mixture. Add ice and fresh mint to pitcher or individual glasses. Serve immediately.
Notes
- Chill all ingredients beforehand to avoid diluting your drink with excessive ice
- Strain watermelon puree twice for ultra-smooth texture if desired
- Start with less sugar and add more gradually – you can always sweeten but can’t remove sweetness
- Use a muddler to gently press mint leaves for stronger flavor without bitterness
- Substitute part of the water with sparkling water for a fizzy version
