- 1 lb fresh or canned salmon, drained and flaked
- 1/2 cup breadcrumbs (or almond flour for gluten-free)
- 1 egg
- 1/4 cup mayonnaise
- 1 tbsp Dijon mustard
- 1/4 cup green onion, finely chopped
- 1 tbsp fresh parsley, chopped
- 1 tsp Old Bay seasoning (or a pinch of paprika, garlic powder, and black pepper)
- 1 tbsp lemon juice
- 2 tbsp olive oil (for frying)
Instructions
- In a large mixing bowl, combine salmon, breadcrumbs, egg, mayonnaise, Dijon mustard, green onion, parsley, Old Bay seasoning, and lemon juice. Mix well until combined.
- Shape the mixture into 6-8 small patties.
- Heat olive oil in a large skillet over medium heat. Fry the salmon cakes for 3-4 minutes per side, until golden brown and cooked through.
- Serve warm with your favorite dipping sauce, such as tartar sauce or a squeeze of lemon.
Notes
- For a lighter option, bake the salmon cakes at 400°F (200°C) for 15 minutes, flipping halfway through.
- Swap breadcrumbs with panko or crushed crackers for added crunch.
